10 mins prepServes 2
Cozy, savory, and done in 20 minutes. These seared chicken thighs are served in a garlic-ginger bone broth that’s silky, comforting, and so flavorful. Perfect over rice or noodles when you want something nourishing but easy.
1. Heat avocado oil in a medium pot over medium-high heat. Season chicken generously with salt and pepper. 2. Sear chicken 3–4 minutes per side until golden and cooked through. Remove and set aside. 3. Lower heat to medium-low. Add sesame oil, garlic, and ginger; cook 1–2 minutes until fragrant (don’t burn). 4. Pour in bone broth, scraping up any browned bits. Bring to a rapid simmer, then reduce to low, cover, and simmer 5–10 minutes. 5. In a small bowl, whisk coconut aminos, rice vinegar, and tapioca flour. Slowly stir into broth and simmer until slightly silky. 6. Add bok choy and simmer just until wilted, about 3 minutes. 7. Serve over rice or noodles, top with sliced chicken, ladle broth and bok choy over top, and finish with scallions and chili crisp. Enjoy! 💛
