SAVE THIS ONE for an easy, quick, clean-out-the-fridge / no-brainer dinner. These Thai-Inspired Turkey Lettuce “Wraps” are light, lean, saucy, and protein-packed! If lettuce leaves are tiny, turn it into a salad.
For the sauce: Whisk together almond butter, red curry paste, coconut aminos, fish sauce, lime juice, chicken broth, garlic, and tapioca flour until smooth. Set aside.
For the turkey: Heat avocado oil in a large skillet over medium-high heat. Add ground turkey and cook, breaking it up, until mostly browned. Stir in the carrots and red bell pepper and cook until just tender, about 2–3 minutes.
Pour in the sauce, stir, and let it bubble until thickened and glossy. Serve in butter lettuce cups (or over chopped lettuce as a salad!) and top with green onions, cilantro, and cashews.
