AVOCADO TOAST-ADA with Pickled Watermelon Radish
15 mins prepServes 1
A delicious and vibrant Avocado Toast-ada featuring a crispy grain-free tortilla topped with avocado, homemade pickled watermelon radish, kale microgreens, 'everything but the bagel seasoning', and a fried egg.
For the pickled watermelon radish: Whisk together 1/2 cup distilled white vinegar, 1/2 cup water, 2 cloves minced garlic, 1 tsp kosher salt, 1/2 tsp peppercorns, and 1/2 tsp mustard seeds in a jar. Slice 1 watermelon radish thinly and add to the jar. Cover and let refrigerate overnight. They last up to 3 months.
To crisp up the tortilla: Heat a cast iron skillet over medium heat with 1 tsp oil. Place the Siete Foods cassava and coconut grain-free tortilla in the oil and fry gently until almost crisp and golden brown. Flip and continue until it's nice and crisp like a big chip.
Fry one egg to your desired doneness.
To assemble the AVOCADO TOAST-ADA: Top the crisped tortilla with avocado, the prepared pickled watermelon radish, kale microgreens, Trader Joe’s “everything but the bagel seasoning,” and the fried egg.
