EGG in hole Acorn Squash Style!

Inspired by a favorite blogger, this recipe features an egg baked inside a roasted acorn squash. A perfect sweet, savory, and satisfying dish for your weekend breakfast or brunch, compliant with Whole30 guidelines.
Preheat oven to 375°F (190°C). Place the acorn squash horizontally on a cutting board and trim the ends, cutting just enough of the pointy tip to create a flat bottom, taking care not to cut into the hollow part. Cut the squash in half, crosswise, and scoop out the seeds and stringy bits (an ice cream scoop works well for this). Place the squash cut side up and brush the flesh all over with a little olive oil, then sprinkle with a little kosher salt. Place in the oven and bake until the squash is fork tender, 35-45 minutes, depending on its size. Remove from the oven and crack one egg into the center of each squash half. Place back into the oven and bake until the egg whites have set but the yolk is still runny, approximately 8 minutes. Top with crumbled bacon bits and a little Valentina hot sauce.
