Gluten-Free Pomegranate Pistachio Scones

1. Preheat oven to 400°F. Line a baking sheet with parchment.
2. In a large bowl, combine flours, salt, baking powder, and baking soda. Add grated butter and mix.
3. In a separate bowl, combine sugar and orange zest; set aside 2 tosp. Add buttermilk, yogurt, almond extract, and 1 egg to the remaining sugar mixture. Mix.
4. Pour wet ingredients into the dry, mixing just to combine. Add crushed @sahalesnacks mix.
5. Flour a surface and pat dough into a 9x9 square. Cut into 8 triangles and place on the baking sheet.
6. Brush with egg wash (1 egg + water) and sprinkle with reserved sugar.
7. Bake 20 mins, until golden. Cool slightly and drizzle with glaze if desired.
