Kauai Tunacado Sandwich

For the Herb Spread: In a food processor, combine the herb spread ingredients (fresh basil leaves, fennel fronds, garlic cloves, extra virgin olive oil, Dijon mustard, juice of 1 lemon, salt, and pepper) and blend until smooth. For the Sandwich: On a slice of the sourdough, spread some of the herb spread, then add the sliced avocado, sliced tomato and pepperoncini. Spread the tuna spread on the other slice of the sourdough and press the slices together to form your sandwich. If you have a panini press, you can panini the sandwich, but alternatively, use a griddle and toast it with some olive oil on both sides until nice and toasty!
