Mango Salsa Opah with Green Curry Veggies

1. Mango Salsa: Mix all ingredients in a bowl & set aside.
2. Marinate Fish: Pat fish dry. Drizzle with oil & soy sauce. Season with salt & pepper. Marinate for 15 mins.
3. Green Curry: Heat oil in a skillet over medium heat. Sauté garlic, shallot, eggplant, & bell pepper for 4 mins. Add curry paste & sauté 2 more mins. Add coconut milk, fish sauce, & lime zest. Simmer. Add choy sum & cook until wilted. Finish with basil, lime juice, & salt.
4. Serve: Scoop rice into a bowl. Ladle curry around rice. Top with fish & mango salsa.
