Seared Mediterranean Tuna Salad

1. Prepare the Greek dressing: In a bowl, whisk together 1/2 cup olive oil, 1/4 cup red wine vinegar, 2 minced garlic cloves, 1 tsp dried oregano, and 1 tsp Dijon.
2. Prepare the salad base: Remove kale from its stems and very thinly slice it into ribbons. In a large bowl, toss the kale, tomatoes, red onion, cucumber, and kalamata olives with the prepared Greek dressing.
3. Prepare the tuna: Generously season 6oz. tuna steak(s) with kosher salt, black pepper, paprika, and dried oregano.
4. Sear the tuna: Heat some olive oil in a pan over high heat. Sear the seasoned tuna steak(s) for 1 minute on each side until desired doneness.
5. Serve: Slice the seared tuna and serve it alongside the Mediterranean salad. Optionally, top the salad with a little sheep's milk feta cheese. Omit feta for a dairy-free/Whole30 compliant meal.
