Went to the @hanalei_farmersmarket and @hanaleidolphin fish market yesterday and made this delicious dinner last night with all the finds! I tried cooking with a new fish. Opah, last night and really loved it. So flakey and fresh! Served over a green curry coconut sauce, with some rice, some sautéed veggies and a little mango salsa! Amazing! Here is how I made it (more or less): Thw green curry sauce: sauté 2 cloves garlic in a little avocado oil over medium heat. Add 2 tbsp green curry paste and sauté for 2-3 mins. Pour in a can of coconut milk, 1 tbsp coconut aminos, and 2 tsp fish sauce. Whisk to combine and bring to a simmer. Remove from heat and cover to keep warm. Sauté the veggies: I sautéed thinly sliced yellow onion, red bell pepper, green onion and zucchini with salt and pepper until tender. 5 to 7 mins. For the Opah. I simply seasoned each side with salt and pepper and seared until golden brown and cooked through, or flakes easily with a fork, about 4 mins per side (cooks fairly simililar to salmon, so you can opt to use salmon in this recipe if you can’t find Opah) Lastly, the mango salsa: 1 ripe mango peeled and diced, 2 scallions thinly sliced, 1 Hawaiian chili (or Thai chili) thinly sliced, juice of 1/2 lime, 1/2 tsp fish sauce, salt and pepper. Garnish with Thai basil and a wedge of lime for serving! ✨
