Tostada con Tomate Macerado

To make the "tomate macerado": Find the freshest tomato you can find (a locally grown one is recommended) and dice it large. Place the diced tomato in a food processor and pulse a few times to make a chunky purée. Transfer the purée to a bowl and toss with 1 tablespoon of good olive oil, a sprinkle of kosher salt, and fresh cracked black pepper. Serve this tomato mixture over a good, toasty slice of baguette or other good quality bread for the best results.
