Wannabe Korean Bibimbap Bowl

1. Heat a large skillet or wok over high heat. Add about 1 tsp toasted sesame oil. Add the ground beef, some salt and pepper, brown, breaking up the meat, until cooked through.
2. Add 6 sliced green onions, 2 cloves minced garlic, and 1 tsp ground ginger. Toss to combine and cook 2 more minutes.
3. Drain off excess fat and place the meat back into the wok. Add 1 tbsp coconut sugar, 2 tbsp coconut aminos, and 1 tsp fish sauce. Cook, stirring, for about 4 more minutes. Remove from heat and keep warm.
4. Heat 1/2 tsp toasted sesame oil in a separate skillet. Add two big handfuls of spinach, plus a splash of rice vinegar if you have it. Cook until just wilted, stirring; about 2 minutes.
5. Assemble the bowl by placing the steamed rice, the ground beef mix, the sautéed spinach alongside some kimchi, a few sliced cucumbers, and a sprinkle of toasted sesame seeds! Enjoy!
